Luxury Christmas Cake recipe kit - makes a 6” round cake. This couldn’t be easier to make, all your dry ingredients in one jar which you simply add to your wet ingredients and away you go! This recipe can be made up without the jar as well as varied in size and ingredients to suit on request. Please contact us to discuss any variation and we can provide you with details.

 

Jar Contains:

Brandy Soaked Luxury Mixed Dried Fruit ~ glacé cherries; sultanas; currants; raisins; apricots; mixed peel

Plain flour

Brown Sugar

Ground Almonds

Spices

Allergens: Wheat (gluten); Nuts (almonds); (sulphur dioxide)

You’ll need to add:

100g softened butter

2 eggs

1/2 tbs treacle (or syrup)

2 tbs liquid of choice (ie brandy, orange juice, tea, milk)

Method:
pre-heat oven to 130c Fan Gas Mark 2

Grease and line the base and sides of a 6” cake tin with a double layer of paper 

Beat the wet ingredients together before adding the contents of the jar and mix well

Pour into prepared tin and gently flatten

Cover tin with a double layer of paper and bake for around 3 1/2 to 4 hours until a skewer comes out clean

Cool in tin and once cool pierce and feed with liquid of choice. Feed regularly until Christmas.

Keep tightly wrapped/in an airtight container between feeds

For larger sized cakes, follow above method with the following ingredients and baking times

For 7” 8” & 9” cakes you will need:

Softened Butter: 7” 120g 8” 135g; 9” 150g

Eggs: 7” x 2; 8” & 9” x 3

Treacle (or syrup) 7” 1Tbs 8” 1-2Tbs  9” 2Tbs

Liquid of choice -  7” 2Tbs; 8” & 9” 3-4Tbs

 

Baking times:
7”    3 3/4 to 4 1/4 hours

8”    4 to 4 1/2 hours

9”    4 1/2 to 5 hours
